Delicious hunger. That delicious hunger that comes in the afternoon. Where you search deep in your bag for "something" or rummage through the kitchen cabinets for delicacies.
Let me just admit that I have a lot of experience with it. Delicious hunger. That's why I have also developed a certain kind of experience in putting together the ingredients that the kitchen offers - so that a baking project doesn't necessarily become difficult, expensive or time-consuming.
These energy bars are in that direction. They are naturally sweetened by the dried fruits and can be made both gluten-free and vegan if you have vegan chocolate. We have used dark chocolate with a low sugar content.
We hope they appeal to your sweet tooth.
For one serving you will need:
80 g coarse oatmeal
100g raisins
80 g walnuts
100 g dried apricots
1 ripe banana
160g dark chocolate
1 tsp. coconut oil
How to do it:
1. Finely chop walnuts and apricots.
2. Mix this in a bowl with the oatmeal and raisins
3. Mash the banana until it is completely soft and mix it with the other ingredients in the bowl until it is a solid mass.
4. Place baking paper in a baking dish approx. 25×15 cm, spread the mixture out in an even layer and press it thoroughly until it is compact.
5. Bake this pressed mass in the middle of the oven at 180 degrees for 20 minutes.
6. Let the mixture cool. It tastes best cold, so patience is a virtue here. Even when you're hungry 😊
7. Melt the chocolate and coconut oil in a water bath
8. Pour the melted chocolate over the baked goods and spread it evenly
9. Put it all in the fridge for 45 minutes.
10. Cut the bars into bite-sized pieces or into bars – or break off pieces as you see fit.
11. Store in the refrigerator in an airtight container – if there are any left over😊
