That a cake can be both healthy and sweet and sinful?<br \/>\nIt almost sounds too good to be true. But it is. These peanut butter cookies that we have experimented with in the retreat kitchen could well fit that description.<br \/>\nThe healthy thing is that they are packed with good nutrition and are free of gluten and refined sugar.<br \/>\nThe sweet stuff is dates and acacia honey.<br \/>\nThe sinful thing is the taste. And the desire for more.<\/p>\n<p>Do you dare to take the plunge?<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Here is the recipe:<\/strong><\/p>\n<p>If we ignore the melted chocolate topping, then this is a <strong><em>raw<\/em><\/strong> cake. This means that it should not be baked in the oven, but instead given a trip to the freezer or refrigerator to set.<\/p>\n<p>A few hours before you start, soak the cashews. Pour water over them until they are covered, and let them soak for 2-3 hours.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>The peanut slices consist of three layers:<\/strong><\/p>\n<p><strong>#1 \u00b7\u00a0<\/strong><strong>The first layer<\/strong> <strong>The base is made up of almonds and dates. This gives a delicious marzipan-like depth at the bottom.<\/strong><\/p>\n<p>300 grams almonds<\/p>\n<p>\n200 grams of dates without stones<\/p>\n<p>\n1 tablespoon water<\/p>\n<p>Finely grind the almonds in a spice grinder or in a blender.<br \/>\nThen blend the finely ground almond powder with pitted dates and a tablespoon of water. The water will help the dry ingredients come together. If necessary, you can add a little extra water, but only a little at a time. It takes surprisingly little water to make the mixture come together.<\/p>\n<p>Place baking paper in a springform pan or baking pan and press the base evenly so that the base layer is one and a half centimeters thick. Place the pan with the base in the fridge.<\/p>\n<p>&nbsp;<\/p>\n<hr \/>\n<p>&nbsp;<\/p>\n<p><strong>#2 \u00b7\u00a0<\/strong><strong>Second layer<\/strong> <strong>consists of cashew nuts, peanut butter, acacia honey and cold-pressed coconut oil:<\/strong><\/p>\n<p>400 grams cashew nuts<\/p>\n<p>\n5 tablespoons peanut butter<\/p>\n<p>\n5 tablespoons cold-pressed coconut oil<\/p>\n<p>\n6 tablespoons acacia honey or agave syrup<\/p>\n<p>Blend cashews, peanut butter, acacia honey and the cold-pressed coconut oil. It is best if the coconut oil is at room temperature, as it will blend into the other ingredients more easily. If it is cold, you risk it forming lumps.<br \/>\nBlend everything until smooth. In the retreat kitchen, we prefer to blend it coarsely so we can still feel the nut pieces. But if you keep at it long enough, the mixture can also become completely smooth.<\/p>\n<p>Now take the base out of the refrigerator and spread the second layer on top of the first date-almond layer.<br \/>\nOnce done, place the mold back in the freezer or refrigerator until the third layer is ready.<\/p>\n<p>&nbsp;<\/p>\n<hr \/>\n<p>&nbsp;<\/p>\n<p><strong>#3 \u00b7 The third<\/strong> <strong>and the last layer is the topping.<\/strong> <strong>It contains chocolate and coconut oil:<\/strong><\/p>\n<p>200 grams of dark chocolate 70 percent<\/p>\n<p>\n4 tablespoons cold-pressed coconut oil<\/p>\n<p>Let the chocolate and coconut oil melt in a water bath.<br \/>\nThen pour the chocolate mixture on top of the cold nut mixture in a second layer. Make sure that the chocolate layer reaches all the way to the edge.<\/p>\n<p>Before the chocolate hardens, you have the option to decorate with coconut, grated chocolate, chopped nuts, etc. In the picture above you can see pieces of cake with chocolate topping alone and some pieces where we have sprinkled coconut flour over the chocolate.<\/p>\n<p>Finally, let the cake sit in the freezer for two hours or in the refrigerator for three hours. Cut the cold cake into small, candy-like peanut pieces.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Enjoy!<\/strong><\/p>","protected":false},"excerpt":{"rendered":"<p>Kan det virkelig passe?
