The combination of the depth of the mushrooms, the acidity of the white wine, and the richness of the mascarpone gives the soup its balanced flavor.<br \/>\nThe recipe is inspired by Jamie Oliver&#039;s &#039;Real Mushroom Soup&#039;.<br \/>\nBelow you will find my Jutland-Italian version with quantity instructions for four-five people.<br \/>\n&nbsp;<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>500 grams of mushrooms (wild or purchased, whatever we can find)<br \/>\n2 cloves garlic<br \/>\n1 red onion<br \/>\n1 handful fresh thyme<br \/>\nsalt &amp; pepper<br \/>\n1.75 liters of vegetable broth<br \/>\n1 handful fresh parsley<br \/>\nJuice from half a lemon<br \/>\n1.5 dl white wine<br \/>\n100 grams of mascarpone<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Procedure:<\/strong><\/p>\n<p>Heat a large pan (preferably cast iron) and saut\u00e9 the mushrooms in olive oil while stirring.<br \/>\nAfter 3-4 minutes, add garlic, red onion and herbs.<br \/>\nThen season everything with pepper and a little salt.<br \/>\nLet it saut\u00e9 again for 3-4 minutes, until the onions are shiny and lightly golden.<br \/>\nThen pour in the white wine and let the liquid reduce.<br \/>\nAdd vegetable broth and let the dish simmer for about 20 minutes.<br \/>\nWhen the soup has taken on a good flavor from the mushrooms, add the mascarpone and blend the soup to a creamy consistency.<br \/>\nSeason the soup with salt and lemon juice.<\/p>\n<p>To serve, garnish with fresh herbs and a little grated lemon zest.<\/p>\n<p>A good accompaniment to the soup is sourdough bread and a green salad with stir-fried cauliflower and pickled red onions.<\/p>\n<p>&nbsp;<br \/>\n<strong>Welcome!<\/strong><\/p>\n<p>&nbsp;<\/p>\n<hr \/>\n<p>&nbsp;<\/p>\n<p><img decoding=\"async\" class=\"alignleft size-thumbnail wp-image-12394\" src=\"https:\/\/kontemplation.dk\/wp-content\/uploads\/2019\/07\/IMG_2614-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" srcset=\"https:\/\/www.kontemplation.dk\/wp-content\/uploads\/2019\/07\/IMG_2614-150x150.jpg 150w, https:\/\/www.kontemplation.dk\/wp-content\/uploads\/2019\/07\/IMG_2614-300x300.jpg 300w, https:\/\/www.kontemplation.dk\/wp-content\/uploads\/2019\/07\/IMG_2614.jpg 640w\" sizes=\"(max-width: 150px) 100vw, 150px\" \/><strong>Mikkel Strandbygaard<\/strong><br \/>\nis the head chef and chef at many of Kontemplation&#039;s events and retreats.
